Fancy German Fare (October 28)

Let’s celebrate Oktoberfest with a menu inspired by the Rheingau region, known for its beautiful vineyards and yummy Rieslings. From a new version of Zweibelkuchen (savory onion tart) to fruit-stuffed roast pork, German food is more than sausages and sauerkraut! We’ll taste some German wines and get a handle on some of those names (Trockenbeerenauslese, anyone?)

Salmon and Spring Vegetables (May 20)

What could be better than asparagus, morels and salmon this time of year?

We’ll make an asparagus soup that is just as good cold as it is hot, a refreshing citrus salad with mint that can be made 2 or 3 days in advance, an amazing entrée of salmon with morels, peas and ramps (if we can get them!) in a lightly buttered broth, finishing with frozen lemon soufflés. 

French white Burgundies and Chardonnays made in the French style will complement this dinner perfectly. And it’s all gluten-free!

Homemade Gnocchi and Pan-Roasted Veal Chops (Apr 8)

Spring is finally here! We’ll celebrate with a seasonal menu which includes a composed salad with goat cheese, beets and fennel, followed by pan-roasted veal chops with a lovely pan sauce, and homemade ricotta gnocchi. For dessert, milk chocolate petits pots. We’ll be tasting Chiantis and Barbarescos.

In honor of Valentine’s Day, we’ll learn the component parts of classic desserts, such as tarts, napoleons, and cream puffs, so you can improvise and invent your own! We’ll include different tart shells with a variety of fillings, puff pastry, pâte à choux, and sauces: crème anglaise, ganache, caramel and fruit.
